Ingredients: For Cookies 3/8 cup Butter 5/8 cup granulated sugar 1/4 teaspoon salt 2 Eggs 1 tablespoon milk 1 3/8 cups all purpose flour 1/2 teaspoon baking powder 1 tablespoon matcha powder 1/2 cup cranberries, soak in water for 20 minutes and drain
For Buttercream 1 cup unsalted butter, room temperature 1 1/2 cup confectioners’ sugar 2 teaspoon matcha powder 1 tablespoon milk
| Directions:
For Cookies 1. Preheat oven to 375 degrees F (190 C). Line a baking sheet with parchment paper. 2. In a medium bowl, whisk together the flour, matcha powder and baking powder. 3. In a large bowl, beat together the butter, sugar, and salt. 4. Gradually add the egg and milk and beat until well combined. 5. Gradually sift in the flour mixture beating until incorporated. 6. Using a pastry bag fitted with a medium plain tip, pipe 1 1/2″, 2″, 2 1/2″, 3″ diameter circles onto the prepared baking sheet, leaving about 3/4″ between them.Press cranberries into the dough. 7. Bake for 8 minutes. Rotate the baking sheet and bake for 2 minutes or until the edges are turning golden. For Buttercream 1. Beat the butter until soft and creamy. 2. Gradually sift in confectioners’ sugar and matcha powder, and beat until light and fluffy. 3. Add milk and beat until well combined. Makes about 6 servings. |
